a holiday tradition

Most people have a food that reminds them of the holidays. For me, it's phyllo. Ever since I was young my mom would make cheese triangles around Christmas-a mix of three cheeses and parsley wrapped in phyllo and baked. I have been making them every year since I left home. They're great because they freeze really well and can cook from frozen, so you can make trays for the holidays and pull them out when needed. Here's the recipe. 8 oz cream cheese
1 lb feta and monteray combined
3 eggs
1/2 tsp sugar
1/4 c parsley
1 tbsp flour

1 lb phyllo dough
1 1/2 c butter, melted
2 slightly damplened towels

- Mix together first six ingredients for filling and set aside
- cut strips width of triangles from all 20 sheets of dough, returning rest to wrapper.
- place a tsp of filling on bottom of strip and fold in triangles.
-brush triangles with melted butter, place on greased baking sheet.
- bake at 375 degrees for 20-25 minutes (five minutes extra if frozen).

Thanks Jenny! My camera is a Fuji finepix s700. I have had it for over a year and I am really happy with it.
